
Lemon Garlic Roasted Potatoes

To me there's nothing like potatoes! They're extremely versatile and delicious as a side dish or as a meal all on their own.
This simple, yet utterly delicious potato recipe will quickly become one of your favorites!
Here's what you will need:
3 lbs of Small Yukon Gold Potatoes, chopped into medium to small size cuts.
*Tip* I have found that the smaller the cut, the crispier the potato and the larger size is usually a bit softer on the inside. You can decide what texture you like best.
In a separate bowl , mix together the following:
1/4 Cup of Olive Oil
1 1/2 Teaspoon Sea Salt
1 Teaspoon Black Pepper
6 Cloves of Garlic, minced
Set aside 1 Lemon and a handful of Fresh Parsley.
Preheat the oven to 400°. In a large mixing bowl, toss the olive oil mixture over the potatoes to evenly coat.
Place the potatoes evenly on a lightly greased baking sheet or in a 9x13 baking dish.
Bake the potatoes for 45 minutes, tossing about halfway through.
Lastly, take a fresh lemon and wash thoroughly. Zest the outside of the lemon and place in a side dish. Juice the lemon. Set aside.
Wash and chop the parsley.
When the potatoes come out of the oven, generously sprinkle the lemon zest , lemon juice and chopped fresh parsley over top the potatoes.
Tossing all together for the most AMAZING POTATOES!
