Mexican Cucumber Salad

I love this salad on a hot, summer day! It is very light, a little spicy, thanks to the red pepper, and very satisfying! Here is what you need to make this delightful salad!
1 Large Cucumber, diced
2 Bell Peppers, diced ( I like to use orange and yellow peppers for color!)
1 1/2 cups of Grape Tomatoes, diced
1/4 cup of Cilantro Leaves, chopped
2 Garlic Cloves, minced
1/2 Teaspoon of Red Pepper Flakes
1/2 Teaspoon Sea Salt
1/4 Teaspoon Black Pepper
1 Teaspoon of Cumin
3 Tablespoons of Red Wine Vinegar
In a large bowl, mix together the cucumber, peppers, tomatoes.
In a small bowl, mix using a whisk, garlic, red pepper flakes, sea salt, black pepper, cumin, red wine vinegar.
Pour the mixture over vegetables and then toss in the cilantro.
Chill for an hour or more before serving. I find the longer this refrigerates, the better the flavor!
This will keep for up to 4 days in the refrigerator.
