Vegan Vegetable Soup


I created this soup last night, when I wanted a nice, healthy vegetable soup that would comfort me by the fire. This soup is fairly simple to make and is truly delicious!

Here is what you will need:

1 small zucchini, diced

1 celery stalk, thinly diced

1 carrot thinly sliced

1 small yellow onion, diced

8 cloves of fresh garlic, minced

4 tablespoons of olive oil

1 teaspoon of salt

1/2 teaspoon of black pepper

1 teaspoon of Italian seasoning

15 ounce can of diced tomatoes

32 ounces of vegetable broth

1 cup of fresh spinach, stems removed and finely chopped

In a large dutch oven or large pot, heat olive oil over low to medium heat. Add fresh garlic, zucchini, carrots, and celery.

Stir in salt, pepper and Italian seasoning. Cover and stir occasionally, for 7 minutes, until veggies are tender but still firm.

Add in tomatoes and vegetable broth, bring to a slight boil on medium to high heat. Cover and reduce heat to medium-low, for 20 minutes.

Lastly, add your fresh spinach, stir and you are ready to enjoy this delicious soup that is healthy and heart warming and sure to please!
