Curried Chickpea Salad


This dish is very flavorful and easy to make to serve as a side dish or on a salad or in a wrap! Enjoy making and serving!

You will need the following to make your chickpea salad:

2 Cups of Quinoa, cooked

1 Can of Chickpeas, rinsed and drained

1 Red Pepper, diced

1 Yellow Pepper, diced

1/2 Red Onion, diced

1/2 Cup of Grape Tomatoes, quartered

1 Carrot, shredded

Half a Bunch of Fresh Parsley, chopped

Combine these ingredients in a large bowl, tossing to combine.

Now to make the dressing. In a small bowl, whisk together the following:

1 Tablespoon of Olive Oil

1/2 Teaspoon of Salt

1/4 Teaspoon of Black Pepper

3 Teaspoons of Curry Powder

Toss salad and dressing, coating evenly and refrigerate overnight or at least a few hours before serving to allow the flavors to blend!

This will keep in the refrigerator, covered for 3 days.
