Mango Edamame Quinoa Salad

This sweet and savory dish is one of my all time favorite summer salads! One bite and you'll be head over heels! Cheers to food that is as delicious as it is nutritious!!!

Here is what you will need to make this beautiful dish:

1 Cup of Red Quinoa, cooked

6 ounces Edamame, shelled

1 Cup of Fresh Mango, cubed small

1/2 Cup of Red Bell Pepper

1/3 Cup of Almonds, sliced or very finely chopped

1/2 Cup of Seedless Raisins

1/2 Cup of Red Onion

1/3 Cup of Unsweetened Coconut Flakes, finely shredded

Marinade:

3 Tablespoons of Balsamic Vinegar

1 Fresh Lime, juiced

1/4 Cup of Fresh Cilantro, chopped fine

1/2 Teaspoons Pink Salt

In a large mixing bowl, combine quinoa, edamame, mango, bell pepper, almonds, raisins, red onion, and coconut.

In a blender or food processor, combine the ingredients for the marinade, balsamic vinegar, salt, lime juice and cilantro. Blend until the cilantro is finely chopped.

Pour marinade over quinoa mixture and toss to coat evenly. Cover and refrigerate for a few hours or overnight before serving. Will keep for 5 days covered and sealed in the refrigerator.
