"Sugar Cookie" Date Treats



My kids, like most kids and adults, LOVE sugar cookies! I wanted to create something that tastes exactly like a sugar cookie, minus all the sugar and of course, using healthier ingredients. And according to my 9 year old son, these are " a 10 out of a 10" and fun for kids to make too!


You will need the following to make your "cookies":

7 Large Medjool Dates, pitted

1/4 Cup of Raw Cashews

1/4 Cup Unsweetened Coconut Flakes

2 Teaspoons of Vanilla Extract, (using good quality vanilla makes all the difference here!)

1 Tablespoon of Pure Maple Syrup


In a food processor, add all ingredients except dates. Pulse until coarsely chopped, then add dates and pulse a few more times until combined.

Use a teaspoon to measure dough and roll into balls or you can choose to flatten the balls into a cookie like shape if you choose! The choice is yours, but I can guarantee no matter what shape they are in, they will be gone in the blink of an eye!
