Sautéed Garlic Green Beans and Tomatoes

This dish is absolutely divine! It is comforting, filling and perfect for a romantic, date night dinner at home! This dish is sure to become a favorite!

Here is what you will need:

2 Tablespoons, plus 1 Tablespoon of Olive Oil

4 Cloves of Garlic, minced

1 Pound of Green Beans, trimmed and cut into 1 1/2 inch pieces

1/4 of Teaspoon of Sea Salt

1/3 Cup of Water

1 Cup of Grape Tomatoes

1/4 Cup of Red Onion, diced

1/4 Cup of Fresh Parsley Leaves, finely chopped

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add garlic, cook, stirring occasionally, until golden, 2 to 3 minutes.

Remove the garlic to a small plate with slotted spoon, leaving the oil behind add beans and salt to the pan.

Stir to coat, add water, cover and cook, stirring occasionally, until the beans are just tender and the water is mostly evaporated, about 8 minutes.

Add the remaining 1 tablespoon of olive oil, tomatoes, and onions to the pan.

Cook, stirring occasionally, until the tomatoes are just beginning to break down, about 2 to 3 minutes.

Remove from the heat. Add parsley and the sizzled garlic. Stir to combine. Can be served hot or cool down. Either way this dish is absolutely delicious!!!
