Theses garlic potatoes are my favorite go-to recipe for PERFECT roasted potatoes! They come out perfect every, single time and my family LOVES them! They pair well with so many dishes and sometimes I make them as a snack for my kiddos and they nibble away! A healthier alternative to french fries or fried potato chips! Simple to make and have on the table in no time!
You will need the following:
3 Pounds of Baby Potatoes
1/4 Cup of Olive Oil
6 Cloves of Fresh Garlic, minced
1 1/2 Teaspoons of Sea Salt
1 Teaspoon of Black Pepper
Preheat the oven to 400 degrees.
Cut the potatoes in half or quarters and place in a bowl.
Mix together the olive oil, salt, pepper, and garlic.
Pour mixture over potatoes, toss until the potatoes are well coated.
Dump the potatoes on a baking sheet and spread out into one layer.
Roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
Remove the potatoes from the oven, toss with minced parsley, if desired, season to taste, and serve!
