Best EVER Vegan Coleslaw

I was never a big fan of coleslaw until I tried one made with apples instead of sugar and let me tell you, I LOVED it!!! Most coleslaws have added sugars and the flavor can be too sweet. I created this recipe to be sweet and tangy and with a hint of spice and to me, it is PERFECTION! The apple adds extra crunch and sweetness and the dijon mustard and apple cider vinegar add the tangy flavor and cayenne for the kick! I hope you enjoy my healthy, tasty coleslaw creation!
Here is what you will need:
1/4 Teaspoon of Cayenne Pepper
1 Tablespoon of Dijon Mustard
1 Tablespoon of Apple Cider Vinegar
1 Tablespoon of Fresh Lemon Juice
1 Teaspoon of Salt
1/2 to 3/4 cup of Vegan Mayonnaise ( I like Veganaise brand a lot!)
1/2 of a Small Green Cabbage and 1/2 of a Small Purple Cabbage, finely shredded
2 Medium Carrots, shredded
1 Small White Onion, diced
1 Fuji Apple, diced
In a bowl, whisk together the cayenne pepper, Dijon mustard, apple cider vinegar, lemon juice, salt and mayo. Set aside.
In a large bowl, combine the green and purple cabbage, carrot, onion and apple. Pour the mixture over top. Mix well to coat the entire cabbage mixture.
Place in a covered bowl, in the refrigerator overnight or for at least 4 hours before serving. The longer the wait, the more time for the flavors to "marry"! I suggest overnight for best results!
This will keep, covered in the refrigerator for up to 4 days.
