Veggie Stuffed Avocados

I love to eat avocados! These stuffed avocados are perfect for a lunch on the go or a quick snack! They are simple to make and if you chop the veggies and make the quinoa ahead of time, you can make them in a pinch! Eating healthy is simple and made easy with this fast, healthy recipe!
4 Avocados, or more depending on how many people you are feeding!
1 Roma Tomato, chopped
1/2 Cucumber, peeled and chopped
1/4 Cup of Carrot, shredded
1/4 Cup of Red Onion
1 Cup of Quinoa, cooked
1/2 Fresh Lemon, juiced
Sea salt and Pepper
Prep ahead by chopping up your veggies.
I like to store them individually in the refrigerator.
Cook the quinoa by bringing 2 cups of water to a boil in a medium sized saucepan, add 1 cup of quinoa, reduce heat to low. Cover and cook for 20-25 minutes.
Allow the quinoa to cool, completely mixing to the veggies.
To prepare your avacados, scoop the insides out by first separating the avocados in half, then take a spoon and scoop the center. I find that leaving a bit of the avocado around the edge of the inside looks nice.
Cube the avocado and in a large bowl gently toss all the veggies, quinoa, and avocado together. Add the lemon juice to the mixture.
With a spoon, fill your scooped avocados with the mixture.
Sprinkle each one with a bit of sea salt and pepper to taste!
