Italian White Bean Hummus


I love hummus. I mean LOVE hummus. I could honestly eat it daily and never get sick of it! I love traditional hummus that is made with garbanzo beans, but this is another favorite! White beans are a wonderful source of protein, they are high in fiber, and they are great at lowering your cholesterol, making them great for the health of your heart!

I like to serve hummus with veggies. Another fun way to serve them is with homemade pita chips, or homemade potato wedges! I hope you enjoy this light, healthy hummus, Italian style!

Here is what you will need to make your hummus:

One 15 oz Can White Cannellini Beans, drained and rinsed

2 Cloves of Fresh Garlic, minced

2 Tablespoons of Fresh Lemon Juice

1/3 Cup of Olive Oil

1/4 Cup (loosely packed) Fresh Italian Parsley Leaves

Salt and Pepper

Place the beans, garlic, lemon juice, olive oil and parsley in the food processor.

Pulse until the mixture is coarsely chopped and creamy.

Season with salt and pepper to taste.

Transfer the hummus to a small bowl and refrigerate for a few hours before serving.

This can keep for up to four days in the refrigerator.

MANGIA!!! In Italian it means "Eat up!"
