Summer Cilantro Avocado Corn Salsa

It's almost Summer here in beautiful Virginia and to me that brings back memories from my childhood of family, friends, cookouts and lots of corn on the cob eating!
My kids LOVE to sit outside and eat corn on the cob! I love to shuck fresh corn and then serve it to my kids! It is such a fun feeling of creating a memory that I can now pass on!
This recipe is utterly delicious and will require little effort to put together for your next gathering and is sure to be loved by all! You can serve it alone as a side dish, top it on your veggie burgers or tacos, or serve with some tortilla chips! Now you can see why its so great to have at a summer party!!!
Here is what you will need to make this fun, colorful summer corn salsa!
1 Large Avocado, diced
1 cup of Grape Tomatoes, diced
1 1/2 Cups of Bell Pepper, diced (I like to mix all green, yellow, orange and red bell peppers together, to make the salsa extra colorful!)
1/2 Cup of Red Onion, diced
1 Ear of Fresh Corn on the Cob, grilled or boiled and sliced off the cob
1 Fresh Lime, juiced
2 Cloves of Fresh Garlic, minced
1/4 Cup of Fresh Cilantro, chopped
1/2 Teaspoon of Sea Salt
1/4 Teaspoon of Black Pepper
Place in a large bowl, tomatoes, peppers, onion, corn.
In a separate bowl, mix together, lime juice, garlic, salt and pepper.
Pour your lime juice mixture over your veggies and toss.
Gently, toss in the diced avacado, being careful not to over mix as it will make the avacados "melt", unless you want it that way, then mix away!
Sprinkle with fresh cilantro and toss in the fridge for about an hour before serving!
This will keep for about 4 days covered in the fridge, but I honestly doubt it will last that long without being eaten! ENJOY!!!!
