Parsley and Cumin Roasted Carrots

Eating vegan NEVER has to be boring or unflavorful! There are so many spices that add beautiful flavor to many vegan dishes and also boost the nutritional value of the food!
This roasted carrot dish is flavored with cumin, fresh parsley and lemon juice!
Cumin is traditionally used to promote digestion. It is also a rich source of iron and can help promote weight loss and fat reduction.
Remember, eat nutritious AND delicious and you will be glowing from the inside out!
Here is a list of the ingredients you will need to make these wonderful carrots!
1 pound fresh carrots
1/2 tablespoons of ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 tablespoons of olive oil or melted coconut oil
1/2 fresh lemon
A few sprigs of fresh parsley, minced
Preheat the oven to 400°. Lightly grease a large baking dish or baking sheet with olive oil or coconut oil.
Wash and peel the carrots, then cut them lengthwise into thin strips, about 1/4 an inch wide. Place carrots into a large bowl.
With a fork, mix the dry spices in a small bowl. Add the melted coconut oil or olive oil, whichever you prefer.
Pour the seasoned coconut oil or olive oil over the carrots and toss until the carrots are evenly coated.
Spread the carrots in a single layer on the baking sheet or in the baking dish and roast for 15 to 20 minutes, until tender and slightly browned.
Remove from the oven and squeeze the fresh lemon juice over the top and sprinkle with the fresh parsley.
