Maple-Roasted Butternut Squash

Butternut squash is one of my favorite vegetables. I especially love this vegetable in the fall and winter months, as I feel it warms and comforts me when the weather is colder.
This is one of my favorite recipes for butternut squash. It serves well with a simple side dish of quinoa and sauteed kale or simply by itself.
Here is what you will need to make this comforting, heart-warming food that is sure to make you happy and keep you healthy! ❤️
1 large butternut squash
6 cloves of garlic, minced
2 tablespoons of olive oil
2 1/2 tablespoons of pure maple syrup
1 teaspoon sea salt
1/2 teaspoon black pepper
Preheat the oven to 400°
Peel and seed the butternut squash and then cut it into 1 inch cubes. Place the squash on a sheet in one layer, or in a baking dish.
In a separate bowl, wisk together the olive oil, garlic, maple syrup, salt and pepper.
Pour over the butternut squash and toss, evenly coating each piece with the olive oil mixture.
Bake for 20 to 30 minutes.
