Vegan Comfort Food...Potato Cakes with Sauteed Kale, Onions and Peppers
Every once in awhile, I get hungry for comfort food. To me comfort food is something warm and substantial and that tastes utterly delicious.
One of my favorite comfort foods is potato cakes. I love them and my kids love them and on any given Sunday you can find me making batches of them for us all to enjoy.
Here is a quick and basic recipe for fantastic potato cakes and sauteed veggies that make a perfect pair!
I like to use russet potatoes for potato cakes and depending on how many potato cakes you plan on making, you can grate as many potatoes as you'd like.
Take your russet potatoes and use a grater to grate your potatoes.
Meanwhile in your frying pan or skillet, heat on a medium heat a tablespoon or two of olive oil.
Then add a thin layer of your potatoes into the hot pan. This is when I like to season my potato cakes. You can use sea salt and pepper and any spices you might prefer. I find sea salt and pepper to highlight the flavors perfectly.
You can add a thin layer of potatoes to be any size potato cake you would like to have.
Allow a few minutes for the potato cakes to cook until crispy brown before flipping over. You can use your spatula to check. Adjust the heat accordingly!
Once your potato cakes are crispy and browned on both sides you can remove them from the skillet too cool on a plate.
In the same skillet, on a medium to low heat, add a bit more olive oil and then add your bell peppers and onions. Sprinkle with a bit more salt and pepper to season. Cook covered for 3 to 5 minutes.
Then lastly, add your kale and toss with the peppers and onions to sautee lightly. Once the kale has finished sauteing, about a minute or so, you are ready to remove it from the heat and eat!
