Heathers Coconut Carrot Cake Date Treats

Carrot cake has always been a favorite of mine!!! I decided to create my own take on carrot cake using all natural fruits, spices and zero added sugar, making this treat not only decadent but good for you!!! Its a win, win!!!! Its love at first bite!!!
You will need the following:
8 to 10 Medjool Dates, pitted
1 medium Carrot
1 cup of Raisins
1/4 cup of Raw Cashews
1/4 cup of Raw Almonds
1 teaspoon Vanilla Extract
1 tablespoon of Cinnamon Spice
1/8 teaspoon of Ginger Spice
1/8 teaspoon of Ground Nutmeg
1/8 cup of Unsweetened Shredded Coconut
First, place carrot in your food processor or blender and chop until pieces are fine and small. You can also use a grater and finely grate the carrot but the processor/blender saves on time. Its up to you!
Then add your cashews and almonds and chop until the nuts are in small pieces. Add your spices and vanilla extract to the nut and carrot mixture, pulsing a few times to mix.
Next, add your dates and mix on low until blended into a large ball. Remove the mixture and place on a plate or baking sheet and mix with your hands forming a giant ball. Mixture should be slightly sticky, which is good. If it is not add more dates.
Break off small pieces of the date mixture and roll in hands, forming a ball of your desired size. Bite size works well for these treats! Now take your ball and roll it in the shredded coconut and there you have it!!! Yummy carrot cake treats you don't have to feel guilty about eating!!!
