Creamy, Delicious Strawberry Banana Nice Cream

Ice cream has always been a favorite of mine, my kids and that of many people! Since I went vegan years ago, I have been looking for a delicious, creamy vegan ice cream. I discovered Luna and Larry's vegan ice cream and while it is delicious, the only downfall is it is rather expensive and with 3 mouths to feed, a pint at $7 each was not making the cut.

Recently I invested in a Vitamix and it was well worth every cent! I was lucky enough to find one on Craigslist for $100 and it has brought a lot of happiness and healthy creations to my home! And now after creating this absolutely creamy, delicious dairy and sugar free dessert, we are all set for hot summer days!

Here is my recipe for a delicious, healthy alternative to ice cream that you can feel good about eating and feeding to those you love!

Add the following ingredients to your blender:

5 Tablespoons of unsweetened nut milk of your choice ( I like to use almond milk)

4 Tablespoons of real maple syrup or raw agave syrup

2 Frozen Bananas ( Make sure you use frozen banana, as this is what creates the creamy texture of this ice cream)

1 Cup of Frozen Strawberries ( Again make sure you use frozen for texture purposes)

Blend on the lowest setting of your blender. Pulsing and stirring to mix, being extremely careful not to over blend. We are going for fluffy and creamy, not a smoothie. Remember using a high setting will make this ice cream runny. Just pulse, stir to blend and pulse until creamy and chunky and smooth! Eat right away or freeze for later! But I can guarantee if you try a bite, you'll eat it all right away!

You can also use this recipe to create other flavor Nice Creams. Use blueberries, peaches, cherries, mango, whatever your heart desires! Enjoy being creative with different fruits! I find so much joy creating and exploring with healthy foods and flavors!
