Heartwarming Butternut Squash Soup

This time of year, I absolutely ADORE making soups! To me there is something so incredibly comforting about curling up with a blanket and a bowl of hot, delicious and of course, nutritious soup!
This utterly decadent, rich, creamy soup is one of my FAVORITES and truly is heartwarming! Tonight I was in need of some comfort food and found myself making a HUGE pot of this soup to last me and my children the next few days!
Happy cooking blessings to you! Here are the ingredients you will need to make this luscious soup:
1 Medium Butternut Squash, peeled and cut into small cubes
3 to 4 Tablespoons of Coconut Oil or Olive Oil ( I prefer using coconut oil due to the way it brings such a luscious, rich flavor to the squash)
3 Medium Carrots, thinly sliced
1 Medium White Onion, chopped finely
2 Fresh Garlic Cloves, minced finely
2 Teaspoons Curry Powder
2 Teaspoons Ginger Powder
1 Teaspoon Nutmeg
1 Teaspoon Pink Salt
14 ounces Vegetable Broth
14 ounces Unsweetened Coconut Milk
In a large pot, cover with lid and sauté squash in oil on medium heat until tender, which is about 15 to 20 minutes.
Once the squash is tender, add carrots and sauté covered for about 5 to 7 minutes. Then add the onion and sauté covered for an additional 3 to 5 minutes. *TIP* Add onions last when you sauté as they cook faster and tend to burn before your other ingredients may have cooked.
Once the squash, carrots and onions have cooked, add the seasonings and then the broth and coconut milk.
Cover and bring to a boil or medium to high heat for 15 minutes.
Once the soup is finished, allow to cool for 10 minutes or so before adding it to the blender. Add the entire soup and blend on high for1 to 2 minutes until smooth and creamy!
And VOILA! You are ready to serve a cup of LOVE! Mangia and Enjoy! Of course, feel free to add more or less spices or more or less coconut milk to your liking! The fun part of cooking is figuring out what flavors you like and how to change the way food tastes through spices and textures. Sometimes I like to add MORE coconut milk to make the soup have more of a creamy texture! Again, its up to you and part of the pleasure of being a creative cook!
