My Delicious Vegan Quinoa Tabbouleh Salad


I ADORE quinoa! And I also adore tabbouleh! Recently after falling head over heels in love with this superfood, I started researching the health benefits of quinoa. I found that it is one of the most protein-rich foods we can eat. and that it is a complete protein because it contains all nine essential amino acids!!! I don't know about you but learning that made this vegan gal jump for joy! It is also loaded with Fiber, Iron, lysine, which is essential for tissue growth and repair. It also is rich In Magnesium, B2 and Manganese, which is an antioxidant and helps fight free radicals!

One night while experimenting in my kitchen, I came up with a healthy, spin on tabbouleh by using quinoa instead of bulgur wheat! Making this salad gluten free, delicious and highly nutritious!!! I hope you enjoy this lovely, light salad! Its a perfect summertime dish! Bon Appetit!

2 cups of Water

1 cup of Quinoa

Bring water to a boil and add quinoa. Cover and turn heat to low and let simmer for 20 minutes. While this is cooking go ahead and toss together the following in a large dish:

10 ounces of Grape Tomatoes, diced finely

1 large Cucumber, finely diced

1 small Red Onion, finely diced

1 bunch of Parsley, chopped finely ( I use my food processor for this!)

1 large Lemon, juiced ( make sure to use fresh lemon and not lemon juice concentrate!)

1 tsp Himalayan salt or more to your preferred taste

When the quinoa has finished cooking and has had some time to cool, add to your vegetable mixture! And VOILA! You have a beautiful, healthy dish that looks as pretty as it is tasty! Let the salad chill overnight in the fridge to let the flavors marry and blend! :-)
